Watermelon Salsa
Last week I shared a recipe that my Uncle Frank had made for our family reunion last month. Today I share an equally yummy recipe that I gleaned from my Aunt Di and cousin Jill.
You see, my cousin Jill is due with her first baby in late September. Like most mothers-to-be, she has had her share of food cravings and such. One of her big cravings? Watermelon.
Jill came up with this recipe to satisfy her watermelon craving in a really creative, fun and tasty way. My Aunt Di then replicated it for our family reunion, and well, it didn't take me long before I was making it too.
I took it to a neighbors house for a cook-out recently. The result? They *loved* it and it was gobbled up in no time. Try this recipe, I implore you. It is that good.
Watermelon Salsa
4 cups of watermelon, diced and drained
Juice of two limes
1 small onion, diced
1/2 - 1 small jalapeno, de-seeded and minced
1/4 cup of fresh cilantro, chopped fine
1/2 teaspoon salt
Dice the watermelon. To make this much easier, buy a seedless watermelon and cut off each end first. Then, stand the watermelon on its end and with a sharp knife cut off the rind from all around the watermelon. Slice and dice your watermelon.
Mix 4 cups of watermelon with the remaining ingredients. Stir well to incorporate. Let sit for 1 hour before serving for best taste, or you may serve it immediately.

Serve with tortilla chips.
