In the Fall GardenI love the autumn, I really do. In the hot summer months, I crave to have the windows open without oppressive heat and humidity sneaking into our house. When the weather cools and we can open our windows again, I am a happy camper. (Side note: despite autumn arriving last week, our weather is just now starting to turn fall-like. Braised Red CabbageMy father-in-law's family is from Germany, so perhaps that accounts for my not being surprised when Sweet Pea Husband (SPH) said to me the other day, "you know what I would love to have sometime soon? Salad BlissWe're back from our visit to Grandma and Papa's house, which always is a treat. They live right on the water, and their home looks out on the water from almost every room. Roasted Vegetable Pizza SauceOne of my favorite way to sneak in extra vegetables is by making big batches of homemade pizza sauce. Actually, you can use this sauce for pasta, lasagna, eggplant parmesan or anything that requires a marinara-type sauce, but we call any sort of marinara "pizza sauce" to help encourage R and G to eat it. They love pizza; tomatoes and vegetables, not nearly as much. But tomatoes and vegetables abound in this simple pizza sauce. You can somewhat alter this recipe to what vegetables you have on hand, but you need to keep the base of this sauce tomatoes, or the flavor suffers. [more] August 20, 2009
Stuffed Peppers and Tomatoes and Squash, Oh My!Our extra tomatoes, peppers and zucchinis were put to a good use for dinner the other night. Garden CalzonesBetween our garden and our CSA, our produce drawers overfloweth. Here's a fun way to use vegetables, with the added bonus of them being "hidden" in a calzone (read: picky eaters might be more apt to eat them). You can use any combination of vegetables you wish, even customizing each calzone as you make it. We used our favorite homemade pizza dough, but commercially made dough works great too.
