Pumpkin SeedsHave you carved your pumpkins yet? If you have, did you save the seeds? Did you know that pumpkin seeds toast up super yummy and are rich in iron, zinc and antioxidants? I have tried many times to roast pumpkin seeds and I have found that the best way to roast them is to do it in a fairly low temperature oven for about an hour or more. Bake-o-ramaWhen the weather turns cool, I turn to baking. Perhaps it is an attempt to stave off the cold weather by keeping my kitchen warm, or maybe it’s just an excuse to whip up some sweet things. Either way, it is fun to do with the boys and the resulting treats sure do yum up the day. [more]

Redemption in SnacksAs life gets busy and busier, I find us doing more eating-on-the-run, especially as I tote R and G around to and from school, activities and other fun times. If we can't eat a healthy *meal* on the run, sometimes I can sneak in an extra vegetable or fruit through snack time. These easy, easy pita chips are a surefire way to get R and G to eat extra hummus. Every time I make homemade pita chips, the boys get all sorts of excited and gobble up an extra dose of whatever I am serving up with them. [more]

Blueberry Lemonade BreadR loves blueberries. He would probably eat at least a pint or two at one sitting if I didn't stop him. R also loves lemonade. So I guess I developed this recipe to suit R, but G loves it too, and on the spectrum of muffins or bread, this one is quite healthy. It has blueberries, whole wheat flour and is reduced fat, but don't tell R and G about the healthfulness, they just eat it because they love it. Blueberry Lemonade Bread

Quick Breads, Quick SnacksWith school back in session for most of us with school age children, this week I will share one of my favorite ways to eat healthy on the go, be it before school, after school or wherever you may be running. Quick breads are aptly named for the amount of work that goes into mixing them together; not so much for the amount of baking time they require. Quick because there is no yeast, and therefore the prepping of the batter or dough for the bread is quite speedy. Yet the baking time for many of these breads hovers around one hour. Watermelon SalsaLast week I shared a recipe that my Uncle Frank had made for our family reunion last month. Today I share an equally yummy recipe that I gleaned from my Aunt Di and cousin Jill. You see, my cousin Jill is due with her first baby in late September. Like most mothers-to-be, she has had her share of food cravings and such. One of her big cravings? Watermelon. Jill came up with this recipe to satisfy her watermelon craving in a really creative, fun and tasty way. PB&J on the goYears ago I was in a gift shop in rural Virginia that sold little packets of what they deemed “peanut butter and jelly on the go.” Little bags of Oyster crackers, raisins and peanuts, it was a clever way to market their unique brand of snack packs. It was with this idea of portable peanut butter and jelly in mind that I slightly altered a recipe we have used many times to come up with a healthier and tastier play on the classic PB&J. The Super Bowl ComethMy brother, who lives in Southern California, once commented that friends who have avocado trees always experience a rash of avocado thefts this time of year.
