As life gets busy and busier, I find us doing more eating-on-the-run, especially as I tote R and G around to and from school, activities and other fun times. If we can't eat a healthy *meal* on the run, sometimes I can sneak in an extra vegetable or fruit through snack time. These easy, easy pita chips are a surefire way to get R and G to eat extra hummus. Every time I make homemade pita chips, the boys get all sorts of excited and gobble up an extra dose of whatever I am serving up with them. Take the added step to seek out 100% whole wheat pitas and feel especially good about what you are letting your kiddos gobble up at the snack table. Pita Chips 3 - 6 inch whole wheat (or white) pitas 1 tablespoon extra virgin olive oil 1/4 teaspoon salt seasoning* Preheat the oven to 425 degrees. Slice each pita like you would a pizza, cutting into 8 slices each. Separate each wedge, and layer the pita pieces on a baking sheet, placing them close to one another, but trying not to overlap. Drizzle the pita pieces with olive oil and salt. *If desired, you can add seasoning, such as 1/4 teaspoon of garlic powder, Italian seasoning, cumin or other favorite seasoning. Bake for 8-12 minutes. Check frequently after 8 minutes because the chips can go quickly from warmed to burnt. Remove from the oven when they are slightly browned and let cool for several minutes.
