One of the most requested items from my friends are new, easy recipes for cooking fish. If you are like them (and me), you may not be completely familiar or comfortable with cooking fish, but wish you had a fool proof way to easily cook it. Well, look no further. This is one of the Sweet Pea Family stand-by fish recipes. SPH actually came up with it, and it’s beauty is in the simplicity of it. Once you get the marinade down, you can then cook the fish under the broiler in your oven, on the grill or in a sauté pan on the stovetop. The flavors are fresh, vibrant and really tasty, perfect for a quick weeknight meal or even a special dinner. Simple Lemon Herb Fish 1 lemon 1 tablespoon oil, preferably extra virgin olive oil 1-2 tablespoons fresh herbs (we like mint, but you can also use basil, parsley, or even thyme) ¼ teaspoon salt ¼ teaspoon ground pepper 1 pound fish (again, you can use whatever you wish—tilapia, cod, orange roughy, etc) In a shallow non-reactive dish (don’t use metal, as the lemon will react with the metal and make an “off taste”), zest one whole lemon and then add the juice of the same lemon. Add the oil and stir to combine a bit. Wash and dry the herbs, and finely chop them. Add the herbs, salt and pepper to the lemon mixture. Stir to combine. Rinse and pat dry the fish, and add to the marinade. Let marinade 20-30 minutes and then cook. Note: a simple way to tell if the fish is completely cooked is when the fish flakes when touched with the prongs of a fork Serves 4 SPC
