I made cinnamon scones yesterday! It was one of those days (but with snow) here. And I recently started using ground flax seed in all of our baked goods. It's officially to get more fiber into Scooter, but he turns down most of my baked goods without even trying them. So at least I'm getting the fiber.

L. rarely eats my baked goods, which is unfortunate. He didn't, for instance, eat these glorious muffins, which I thought he might actually like. He does eat pancakes (plain, without anything) but I pack lots of flax seed and fiber into those!

I do the same thing with pancakes and then try not to hover or look interested in how many I can get down him. I've been experimenting with chocolate chip cookies to see if I can make some he'll accept in place of the gluten-free ones he likes right now.

It's such a shame because baked goods are such a great way to get extra nutrition into beyond picky kids!
