Individual Apple Bacon Coffee Cakes

To celebrate National Apple Month this month, I have a new apple recipe each week in October.  Today, I share a lightened and really tasty treat that is perfect for either breakfast, a special brunch or even a dessert treat:  individual apple coffee cakes that boast a special ingredient.

Bacon is no longer just a breakfast meat.  It is turning up in all sorts of recipes, most notably, in sweets and desserts.  I’ve seen maple glazed bacon, bacon and chocolate treats and even bacon candy.  So why not use it in a coffee cake?  These individual coffee cakes taste just like when the maple syrup from your pancakes merge with bacon on your breakfast plate.  Sweet, savory and a beautiful marriage of awesome flavors.

Individual Apple Bacon Coffee Cakes

1 stick butter, softened
¾ stick (6 ounces) fat free cream cheese, softened
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups flour
½ teaspoon salt
1 ½ teaspoons baking powder
2 large apples
1 ½ teaspoons ground cinnamon
¼ cup crumbled cooked bacon pieces

Preheat oven to 350 degrees.

In a large bowl, cream the butter, cream cheese and sugar.  Mix until well blended.  Add the eggs and vanilla, stir well until fully incorporated.

In a medium bowl, mix the flour, salt and baking powder.  Pour into the large bowl and mix until just combined.

Core and dice the apples into small pieces (you don’t have to peel the apple).  



Pour the apple, cinnamon and bacon into the batter, and stir until just combined.



In a muffin tin, that has either been greased or using muffin tin liners, pour the batter into the cups.

Bake 25-35 minutes, or until the tops begin to brown.



Makes 12 individual coffee cakes
