Aliki, These sounds amazing! I've been trying to figure out new ways to use our fresh grown zuccs and tomatoes (ours aren't ripe yet, just planning ahead). I will try this recipe for sure.

I also agree--the simplest meals are usually the best!

I know from the many tasty recipes you've posted, that you are a believer in simple meals, too!

These were really yummy--I'm already thinking if they might be made even better with the addition of a little feta cheese, or fresh parsley or basil...I guess the possibilities are endless!

I love zucchini. Love it. I have two in my fridge right now. Might just be making some cakes with them. My grandpa used to make parsnip patties and I loved those, and him, so much. I think these will be similar and I am pretty sure I'm going to be trying out that recipe soon!
