TransformationIsn’t it amazing how something so bitter raw, can become a sweet and tangy delight when cooked low and slow? I am not a big fan of raw onions in large quantities, but if they are cooked just right, they become caramelized and oh-my-goodness good. Carrots, Part 2I must be on a carrot kick, because I have another carrot recipe for you this week. If yesterday’s Carrot Soup didn’t ring your bell, perhaps these Balsamic Glazed Carrots will be more up your alley. I love roasting vegetables. I have yet to find a vegetable, ok, except perhaps lettuce, that doesn’t benefit and taste fabulous roasted. Roast potatoes, roasted asparagus, roasted squash, even roasted brussel sprouts are some favorites. But these carrots are another good roasted vegetable to throw into the mix. [more]

Sauteed MushroomsMushrooms--not a huge kid favorite, but perhaps you are lucky and have kids that like mushrooms. I should be so lucky. Despite my love of sauteed mushrooms, my boys are ardent mushroom-haters, so this recipe would be classified as an parents-only recipe in our Sweet Pea family. Vegetable BrothOur family is about 2 weeks into our Vegetarianism for Lent project and so far, so good. I actually have more energy, feel better and enjoying food in a brand new way. I haven’t craved any meat or seafood yet, and actually the big test was this past weekend when a good friend’s husband smoked some pork barbecue on Saturday. I love pork barbecue and her husband is a real pro. But as good as it smelled, I didn’t lament having vegetarian black bean soup. [more]

Peanut Butter Energy BarsHappy March All! Did yours come in like a lion? My boys love the peanut butter granola bars from Trader Joe’s. They are a convenient snack and great for a portable on-the-go bite. This recipe is my attempt to up the ante and make a bar that is peanut-y, super delicious and also full of some good power food too. These bars sport whole oats, sesame seeds, ground flax seed and peanuts. Dressed up GnocchiPasta with "red sauce" (marinara) is a staple in many homes. While I love making a simple, healthful pasta dish for our family, a few quick changes can transform pasta with red sauce into a company-worthy dish. I was reminded of this the other day when SPH was cooking dinner. Ever the experimenter, he had said he was making gnocchi with marinara, but little did I know he was making something as delectable as this:

Spaghetti NouveauI have fond memories of my mom and dad eating roasted acorn squash when I was a child. As a picky eater, regardless of how much sweet brown sugar and butter my mom used on top, I simply wasn't a fan. Now as an adult, I love squash and one of our family's favorite roasted squash sides is using spaghetti squash in place of pasta. [more]
