Banana Chocolate Chip Bread, Jessica

I got this recipe from my mom, who got it from a friend, whose daughter found it from another source. In other words, it has been passed from person to person to person, which in my book, speaks volumes. Who would pass on a dud recipe?

This bread is a bit more decadent than the last two days’ recipes, but everyone needs a treat now and then. The miniature chocolate chips are just enough chocolate to satisfy a chocolate craving, without overwhelming the bread.

1 ½ cups all purpose flour
1 teaspoon baking soda [more]

Natural Music Makers, Craftivity Corner

This activity combines music, nature and science. Create the shakers then compare and discover what in your backyard makes the loudest, lowest or softest sound when you shake it.

1. Gather your materials. You will need some plastic eggs, or small plastic containers with lids. A bowl and a backyard to gather your bits of nature.

Labor Day activities

Labor Day is Monday, September 7th. So congratulations to everyone who has survived layoffs and job cuts in this recession, time to celebrate. For all you slackers, get to work! Just kidding. Labor Day is bitter sweet for me. It's a bummer since it marks the end of summer, but autumn is my favorite season and we get a long weekend! Hooray for long weekends!

How do you plan celebrating Labor Day? [more]

Blueberry Lemonade Bread, Jessica

R loves blueberries. He would probably eat at least a pint or two at one sitting if I didn't stop him.

R also loves lemonade. So I guess I developed this recipe to suit R, but G loves it too, and on the spectrum of muffins or bread, this one is quite healthy. It has blueberries, whole wheat flour and is reduced fat, but don't tell R and G about the healthfulness, they just eat it because they love it.

Blueberry Lemonade Bread

1/2 cup brown sugar
1/2 cup sugar
4 egg whites
3/4 cup skim milk
3 tablespoons fresh lemon juice
2 tablespoons applesauce [more]

Lessons from little ones, Professor Mom

If you’d seen me yesterday you might have noticed I walked around my day floating on a cloud of contentment and happiness over the outpouring of well-wishes about my birthday I received all day long. Say what you will about Facebook and Twitter and the likes, but the internet is a great place—a rich place, a warm place--to be on your birthday.

On Sunday night, the eve of my birthday, I tucked T. into bed after stories and songs and just before I left her room she asked, “how old will you be tomorrow, Mama?” [more]

Fall Ribbon Ring, Craftivity Corner

Get moving this fall with these fall ribbon rings. I was inspired by these ribbon rings over at Make and Takes last spring and filed it away. Now that the leaves are starting to fall in our yard I decided to make one for my son to play with. We pretended the ribbons were falling leaves and when we shook them they even sounded like leaves rustling. [more]

Monday's Health Tip: Are you an emotional eater?

It happens to all of us once in a while- you have a really bad day and all you want to do is go home and sit on the couch with a giant tub of ice cream. In your mind, there is nothing else in the world that will make you feel better. Or maybe you just got the promotion you’ve been trying to get for the past two months. What do you do? You celebrate with a large cheese pizza. Does this sound familiar? [more]

Quick Breads, Quick Snacks, Jessica

With school back in session for most of us with school age children, this week I will share one of my favorite ways to eat healthy on the go, be it before school, after school or wherever you may be running.

Quick breads are aptly named for the amount of work that goes into mixing them together; not so much for the amount of baking time they require. Quick because there is no yeast, and therefore the prepping of the batter or dough for the bread is quite speedy. Yet the baking time for many of these breads hovers around one hour. [more]

Erratic charity, Talia's Blog

After Sunday morning worship I was driving down the street, my eyes almost blinded by the sun's brightness. In the distance, I saw silhouettes of three people standing on the corner outside of a mom and pop convenient store.

I drove nearer.

It was three of my boys.

I pulled over.

"Hey, what's up?" I asked

"What's up T.?"

"T, we broke," one of the boys said.

That was his way of saying, "The program’s over."

"T, you want to be the driver?" (Referring to a drive by shooting)

What he meant was, "We're back to what we were doing before." [more]
