SPH loves blondies. Really, he has a tremendous sweet tooth, and truth be told, has seldom seen a dessert he doesn’t love. But give him a choice and he will most likely request a blondie, something with butterscotch or lemon anything.
I had some white chocolate chips on hand (another SPH favorite) so I came up with this rendition of blondies which were a home run in the Sweet Pea home. Who wouldn’t love white and milk chocolate in the same dessert?
But here’s the best part about blondies…I am a busy, busy mom. Chances are your life is pretty busy too. We’re all busy. Blondies are the best of all worlds…tastes like a cookie, eats like a brownie and about ten times easier to make (instead of rolling little balls of dough you just throw it all in the bottom of a baking pan). I am all about anything that includes the description “easier.”
White and Milk Chocolate Brownies
¾ cup butter, softened
1 cup brown sugar
¾ cup sugar
1 ½ teaspoons vanilla
2 ¼ cup flour
1 tablespoon baking powder
¼ teaspoon salt
1 cup white chocolate chips
1 cup milk chocolate chips
½ cup walnut pieces (optional)
Preheat oven to 350 degrees.
In a large bowl, cream the butter and sugars together. Add one egg at a time, mixing well between each addition. Add the vanilla and mix.
In a separate bowl, mix the flour, baking powder and salt. Add slowly to the butter mixture, mixing well to fully incorporate.
Pour in the chocolate chips and walnuts, if using, mixing them in by hand.
Press the dough into a 15 x 10 jelly roll pan and bake for 20-25 minutes or until the middle is cooked and edges are golden brown
Makes 24 pieces.
