Where's the Beef?

I'm not a big beef eater, but every now and then something meat-y and delicious sounds good. Recently, my vegetarian mother-in-law shared a book with me entitled the "150 Healthiest Foods on Earth." She is a huge advocate of healthy eating and a wonderful resource for information and recipes. One of the surprises in the book she shared was the revelation that grass-fed beef is rich in Omega Fatty Acids, similar to those that are found in fish such as Wild Salmon. I'll share more nuggets of good information from the book in an upcoming post, but suffice it to say, I learned a lot, including the aforementioned factoid on grass-fed beef. So when our local grocery had a sale on grass-fed beef tenderloin, we picked some up, grilled it up and promptly gobbled it up. Man oh man, this is a good recipe. We used it for beef tacos with just a bit of grated sharp white cheddar cheese, fresh salsa and shredded cabbage. Heaven. And that says a lot coming from a "beef is not my thing" girl. Carne Asada Beef Marinade 1-2 pounds beef tenderloin, sirloin or flank steak 3 tablespoons cider vinegar 1 lime, zested and juiced 3 tablespoons vegetable oil 1/4 cup soy sauce 3 cloves of garlic, minced 1/2 teaspoon salt 3/4 teaspoon ground pepper 1 teaspoon chili powder 1/2 teaspoon dried oregano 1/2 teaspoon paprika 1/2 teaspoon dried cumin Combine all ingredients except beef and stir well. Place beef in a bowl and pour marinade over for at least 30 minutes, or up to 6-8 hours. Remove beef from the marinade and grill to your heart's content. Omega Fatty Acids never tasted so good. SPC
