Watermelons are big. Yes, I am the master of the obvious. Unless you are feeding a crowd, if you buy a watermelon, for let's say, the watermelon salsa I posted yesterday, you will probably have some leftover watermelon. Need a super easy, almost effortless way to transform your extra watermelon into a yummy, frozen, fat free snack? Take the extra watermelon and press it through a sieve to extract the watermelon "juice:" Add to every three parts of watermelon juice, 1 part of simple syrup and pop into the freezer (I used 1 1/2 cups watermelon juice, 1/2 cup simple syrup): After an hour or so, it will begin to freeze. Take a fork and scrape and fluff it like so: Continue to freeze and after an hour repeat: Fluff again and you are ready to eat! A granita--a sweet, light summer treat. SPC
