Over the years, thanks to hand-me-downs, garage sale finds and wedding presents, I have amassed a pretty decent collection of baking pans and dishes. And yet, there are times when I want to try a recipe and it calls for a pan size I don't have on hand. What's a cook to do? Throw in the towel and try another recipe? Hardly. First, if it is a casserole or other cooked item, you can easily alter the shape of the pan you use slightly without ill effect. For instance, a baked macaroni and cheese recipe that calls for a 8x8 baking dish will cook up fine in a 9x9 or even a deep pie dish. You need not alter the baking temperature, but you may want to check the baking time. With baked goods however, it is more important that you know exactly the volume of the original baking dish and match it as closely as possible to the original size. So this week's Tuesday's tip is a chart that gives you the volume of many popular baking dishes. Again, you do not have to alter the temperature if you use a different size baking dish, but you may need to alter the time. Just keep a close eye on your baked goods and use a little common sense. The volume capacity of each pan indicates how much water will fit in the pan if you fill it to the brim. Please note that baking recipes almost always have you fill you pan only 1/2 or 2/3 of the way full to account for baking expansion.
