The hot sun and warm days are making our herbs grow like crazy, not that I am complaining! We use plenty of basil in our home, but sometimes the other herbs get neglected. SPH whipped up this recipe the other day to use a few different herbs from our garden; it made for a super-easy quick-fix healthy meal. Tilapia Verde 4 tilapia filets 1 cup of herbs (we used basil, flat leaf parsley, mint and oregano...thyme, tarragon, cilantro would work well too) 1/4 cup olive oil zest and juice of one lime salt and pepper to taste Puree the herbs, olive oil, lime zest, lime juice, salt and pepper: Use about half of the herb mixture to marinate the fish for about 30 minutes: Grill the fish 4-5 minutes per side and serve with remaining herb sauce: Serves 4. Psst...you can use any sort of fish really, we just used tilapia that evening. You could probably even use the sauce on chicken or pork too! SPC
