Our extra tomatoes, peppers and zucchinis were put to a good use for dinner the other night. It was a fun way to use our produce and made for a really scrumptious adaptation of our meatball recipe. We used our favorite meatball recipe, Houston Meatballs, but with ground meat, not turkey. Instead of shaping into balls, we took some fresh tomatoes, pepper and zucchini and hollowed them out: We filled each with some meatball filling: and baked at 400 degrees for about 20-30 minutes, and then topped with some fresh parsley: For the next batch, we even topped each with a little shredded cheese...delish!
