Squashed Skewers

Isn't it funny what little kids sometimes find funny? Case in point: I was preparing this easy side dish of grilled yellow squash and my five year old son R asked me what I was making. I replied I was making yellow squash skewers, but he thought he heard "squashed skewers." Perhaps it was the word "squashed" or that the words sound funny if you say them again and again (try saying "squashed skewers" five times fast!), but R found the whole idea hilarious. Whether you find them funny or not, this is a super simple recipe for grilled skewers of squash. Yellow Squash Skewers 2 medium yellow squash 1 tablespoon balsamic vinegar 2 tablespoons extra virgin olive oil pinch of dried rosemary, dried basil and dried oregano 1/4 teaspoon salt and pepper Slice the squash thinly, no thicker than 1/4 inch. In a bowl mix the remaining ingredients. Toss the squash in the bowl with the vinegar and oil mixture. Let sit for 15 minutes or more (since the squash is thin, it soaks the marinade up very quickly, almost like a sponge). Grill over high heat for just a few minutes per side, until they are almost blackened. The light charring of the squash brings out a really neat flavor, almost a carmelization. Serves 4 as a side.
