This recipe is a keeper. The subtle sweetness in the sauce makes it really kid friendly, while still satisfying adult tastes. You can prepare it in about 15 minutes in the morning and have a beautifully tasteful meal for dinner that night.
I use boneless, skinless chicken thighs for this recipe, but breasts or any other chicken parts would work just fine. This recipes makes enough for 8, but you can also use the leftovers for chicken salad or a soup or stew.
Slow Cooker Orange Chicken
4 pounds boneless, skinless chicken thighs
1/4 cup flour
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
2 onions, quartered
1 orange, sliced
1/4 cup orange juice concentrate
1/4 teaspoon red pepper flakes (optional)
Mix the chicken, flour, salt and pepper in a large bowl, tossing to fully coat the chicken.
In a large skillet over medium-high heat, add the oil and let come to temperature. Add the chicken and sear, 3-4 minutes per side to allow browning. Remove from heat.
In the bottom of a slow cooker place the onions and orange slices. Put the chicken on top:
In the large skillet, add the orange juice concentrate and scrape the bottom to mix the concentrate with the good cooking bits on the bottom of the pan:
Pour over the chicken in the slow cooker. Cook chicken on high for 4-5 hours, low 8-10 hours.
Serve chicken over grits, pasta, couscous or rice. Yum.
Serves 6-8 or 4 with enough for leftovers.
