My mother-in-law shared this recipe with me about 10 years ago. I have made it many times and almost without fail when I make it, someone asks for the recipe.
To make things really simple, you can pour everything into a slow cooker and let them simmer all day long, or you can simply whip them up in a half an hour on the stove top.
While this recipe is vegetarian, for a decadent twist, add a few slices of crumbled cooked bacon before serving.
Amazing Baked Beans
1 large onion, chopped
2 - 15 oz cans Great Northern Beans, drained and rinsed
2 - 15 oz cans Black Beans, drained and rinsed
1 cup barbecue sauce
3/4 cup ketchup
1/2 cup molasses
3 tablespoons brown sugar
1 tablespoon soy sauce
1 teaspoon paprika
Combine all ingredients. If using a slow cooker, cook on high 3-4 hours or low 6-8 hours. If cooking on the stove top, bring to a boil and then simmer 20 minutes before serving.
This makes a great easy side dish to a big meal, or you can half the recipe for a smaller amount.
PS--A special shout out to my mom, whose birthday is today. Happy Birthday Mom!!
