Plan B Calzones

I love my slow cooker. Who wouldn’t love a kitchen tool that says to you, “You just throw some things into me in the morning, and go about your day. I will take care of the cooking and make sure your dinner is ready come dinnertime.” But despite my love of my slow cooker, there are some slow cooker recipes that turn out, well, soggy. Not that this is always a bad thing, especially if you want fall-off-the-bone tender meat. But if you are looking for a little definition in your meat, then slow cooking sometimes doesn’t produce the desired result. (Side note: browning or a quick sear before putting the meat in the slow cooker can help). I have an easy way to cook chicken in the slow cooker which I have used many times to produce really tender chicken. I tried to tweak and alter the recipe a bit to create a Tandoori Chicken in the slow cooker, but sadly, the recipe just wasn’t a winner. So what’s a mom to do? When your slow cooker hands you bland chicken, make it more flavorful. In this case, I used the chicken from the slow cooker, and combined it will about ½ cup of Greek yogurt and 2 teaspoons of curry powder. I whipped up some Sweet Pea Pizza Dough and made some small circles of dough for calzones, topping each dough circle with some of the chicken mixture: and some mozzarella cheese. I baked them for about 20 minutes in a 425 degree oven or until browned slightly. Good-bye bland slow cooker chicken, hello super-tasty Indian calzones. Problem solved. SPC
