Homemade Popsicles

Next week is the last week of summer before R starts full day elementary school. R, G and I came up with a “things we want to do before school starts” list earlier this week. We crossed a few things off our list this week, and next week we will try and head out to the zoo, maybe play miniature golf (their idea, not mine) and perhaps make another round of homemade popsicles. Many years ago I was given a popsicle making kit and as a family, we’ve come up with countless versions. Recently we tried a new combination, blackberry and lemon striped popsicles, to rave reviews. Here’s an important disclaimer: blackberries stain, so we enjoyed these outside, on a “we’re-already-dirty” day. Here’s how we make our homemade popsicles: Blackberry and Lemon Popsicles 1 pint blackberries ½ cup applesauce ¼ cup simple syrup (half water, half white sugar, brought to a simmer until the sugar dissolves) Combine all the above ingredients in a blender: Puree and strain the mixture through a fine sieve to remove the seeds. Fill each popsicle mold halfway, insert a popsicle stick, and freeze. Combine: Juice of one lemon ¼ cup simple syrup Pour the lemon mixture on top and freeze. Pop out and enjoy!
