Grilled Fruit

So here we are at the precipice of Memorial Day weekend. I wonder how many of you have already begun the weekend a bit early? We arrived late yesterday at R and G’s Grandma and Papa’s house. After a quick airplane ride which the boys absolutely loved (G when the plane landed after the hour flight: “it over already!?”), we rented a car and drove through the Baltimore/DC traffic at around 5pm. Note to self: next time, remember rush hour when determining which flights to choose. So, to any of you stuck in getaway-early weekend traffic, my condolences. Perhaps thinking about your Memorial Day picnic will ease the pain. If chicken satay or grilled fish tacos aren’t up your alley, why not try something outside the (grill) box and give grilled fruit a chance? While at first this idea might sound bizarre, grilling certain fruits can make for a fun and dramatically different healthy ending to your Memorial Day meal. Firm fruits, such as peach halves, pineapple slices and not-quite-ripe bananas grill up beautifully and create a simple way to serve dessert at your Memorial Day grill party. The easiest way to do grilled fruit is a simple one to one ratio of melted butter and brown sugar to brush the fruit as it is cooking, which will quickly caramelize and create a sublimely sweet fruit: Simply serve grilled fruit with vanilla ice cream, and drizzle with a bit of the butter and brown sugar sauce.
