Gingered Pear Crisp

As the fall bake-a-thon continues in the Sweet Pea Kitchen, I’ve been trying to keep things light. Not that I am opposed to a good decadent dessert, it is just if I didn’t have some good light and healthy baked goods up my sleeve, we’d all be needing some new, bigger clothes.

So it was a fun challenge last week to create something tasty, yet light, when we had some unexpected visit from my brother last week. He flew in from California and so a lot of the Ohio family dropped in on a week night for some dessert and conversation.

So I used it to create a quintessential fall dessert, a pear crisp. The ginger added a neat little kick of special flavor to a wonderful warm dessert.

Gingered Pear Crisp

12 pears, peeled, cored and sliced
3 tablespoons brown sugar
2 tablespoons lemon juice
1 tablespoon flour
1 cup quick cooking oats
1 cup brown sugar
1/3 cup flour
¼ cup vegetable oil
¼ cup diced crystallized ginger

Preheat the oven to 350 degrees.

In a large baking dish (9x13 or the like), combine the pears, brown sugar, lemon juice and flour, gently tossing to cover the pear with the lemon juice to reduce browning.

In a separate bowl, combine the oats, sugar, and flour. Stir well. Add the oil and mix well. Fold in the ginger.

Top the pears with the oat mixture.

Bake for 30-35 minutes or until the pears a bubbly and the top is brown.

Serves 6-8.
