Okay, let’s get real: as much as I love to cook, bake and create in the kitchen, I am first of all, a mom, and therefore, have a long list of a responsibilities and a short amount of time to finish said list. Sometimes, as much as I would love to have an idyllic kitchen moment with my boys, I open a box of mix and whip up a batch of _____ in no time flat. Perhaps it is because I am a food blogger and take pride in making things from scratch, but even if I make something quick and easy, I often feel like I need or want to jazz it up. Here’s a “for instance”: R comes home from school with a note alerting parents to a bake sale or school celebration. It so happens that this particular week I have stretched myself to the max and really don’t have time to whip up a homemade dessert. I look in my pantry and see a box of brownie mix. Mmm…brownies. I make the box of brownies but they look a little plain. What’s a busy mom to do? Here’s a quick way to fancy up a chocolate dessert to make it a little bit more special: After baking the brownies, place a few tablespoons of creamy peanut butter in a microwave safe dish. Cook the peanut butter on high in the microwave for 20 seconds and stir. Repeat. Once the peanut butter is very runny, take a fork and dip it fully in the peanut butter. Drizzle the peanut butter lightly over the batch of brownies until you have a pattern that looks good. The runny peanut butter drizzles quite nicely and once it cools, it will firm up and stay put on the brownie. Voila! A really tasty chocolate and peanut butter dessert, that looks fancy and special, but took next to no time to make. SPC
