How was your weekend? Ours was flat out busy. My wonderful parents came last Thursday to help us tackle our many home projects and spring chores before our Easter horde arrived Sunday morning. The boys were thrilled because our list of things to do included the spreading of bulk mulch: It's not every day that you have a dump truck in your backyard, let alone a huge mulch pile, so the boys were in dirt heaven (can you hear the sound of my washing machine in the background working overtime?) Easter was fabulous, mainly because my Uncle Frank did the ham, which he mastered long ago, but each year somehow makes it even better. Our meal was largely potluck, but SPH did most of the additional cooking, leaving me to have a fairly relaxing afternoon. I loved the sight of Uncle Frank and SPH working their magic in the kitchen: After a productive and fun, but exhausting weekend, easy is the name of the game for cooking this week. One of my very favorite recipe blogs is Rookie Cookie, which has this recipe for Ham and Eggs Spinach Salad. While this recipe is right up my and SPH's alley, I'll have to stick with a more a la carte version of this meal idea for the boys...diced ham, hard boiled eggs (they both like to eat them plain!), and some vegetable on the side.
