Last week we were having broccoli with some Chicken Parmesan and a side of pasta.  Broccoli is one of my least favorite vegetables, but for some reason it seems like a lot of children eat it.  My theory is that children, especially young children, have an innate sense of creativity with their food, and eating “trees” of food is intrinsically fun. 

But I digress.

Even though R and G will eat broccoli, it is hard to compete with amazing Chicken Parmesan and pasta. In an inspired moment, R and I created this on his plate:

Such a simple way to make eating broccoli more festive and fun.  Now if I can figure out a way to deck our plates with spinach, or brussel sprouts…

As a side note, here's a trick to keep your steamed broccoli fresh and green looking, rather than brownish.  Once your broccoli is steamed:

Immediately immerse it in an ice bath:

This will quickly halt the cooking and help it retain its fresh-as-a-newly-cut-Christmas-Tree hue.  Once you are ready to serve it, pop it back in the pan to reheat it slightly.
