Trader Joe's used to have a curried chicken salad wrap that I adored. It had been awhile since I thought to buy one and when I looked for it last time, I discovered they stopped carrying it. Bummer. What's a mom to do? Figure out how to make a good curried chicken salad at home! This recipe is de-lish, and since you make it at home, you can wrap it up, layer it or serve it over a green salad. Curried Chicken Salad 2 cups chopped chicken 2/3 cup Greek Yogurt (or plain yogurt) 2 tablespoons light mayonnaise 2-3 teaspoons curry powder Juice of half a lime 1 tablespoon honey 1 teaspoon ground ginger salt and pepper to taste 1 cup diced mango 1/2 slivered almonds, toasted 1/2 cup raisins 2 green onions, sliced thin Place the chicken in a medium bowl. In a separate bowl, mix the yogurt, mayonnaise, curry powder, lime, honey, ginger and salt and pepper. Mix very well. Add the curry sauce to the chicken, stirring well, but carefully so the chicken doesn't shred or fall apart. Add the mango, almonds, raisins and onions to the chicken mixture. Combine. Makes about 4 cups. SPC
