Christmas Cookies and Treats

This past weekend we went all out with the baking, creating some of our family favorite Christmas treats. At the top of my list of favorite Christmas Cookies are Peanut Butter Kiss cookies. I am not sure who deemed these cookies to be holiday fare, for they certainly could be made any time of the year, but you hardly see them except in December. For me this is probably a very good thing since I could easily eat more than I should in a very short amount of time. There are many recipes out there for this cookie, but this is hands' down my favorite. It is simple and always creates a perfectly chewy cookie. Peanut Butter Kiss Cookies Cream together: 1/2 cup brown sugar 1/2 cup sugar 1/2 cup butter 1/2 cup smooth peanut butter 1 egg 1 teaspoon vanilla Mix in a separate bowl and then add to the peanut butter mixture: 1 3/4 cup flour 1 teaspoon baking soda 1/2 teaspoon salt 1 Bag Hershey Kisses Preheat oven to 350 degrees. After ingredients are all well mixed, shape into 1 inch balls, and place on a cookie sheet. Bake for 10 minutes. Quickly remove and place a unwrapped Hershey Kiss in the center of each cookie and bake another 4-5 minutes. Let cool. Makes about 3 dozen cookies: SPC
