My boys love pasta and broccoli. As an easy, quick dinner, I came up with this dinner last week and voila!, the boys ate a ton of broccoli without me having to ask twice. It was super easy and could be altered to your heart’s content. Need some extra protein? Add some diced chicken or the like. Don’t have broccoli on hand? Use another vegetable or two. This recipe would work beautifully with just about any combination you develop, just keep the sauce and pasta and alter away! Broccoli and Bowties ½ pound mini-farfalle (bowtie pasta) cooked 2 cups broccoli florets, steamed 1 ½ cups vegetable or chicken broth 1 tablespoon cornstarch ¼ cup sour cream ½ cup parmesan cheese dash of nutmeg ½ teaspoon garlic powder ¼ teaspoon ground pepper Boil the bowtie pasta according to the package instructions. While the pasta is boiling, place the broccoli in a metal colander, and place in the boiling water to steam the broccoli, or alternatively, steam in a separate pot. Meanwhile, in a medium saucepan, bring the broth and cornstarch to a boil, stirring constantly to reduce lumps. Once it comes to a boil, reduce to a simmer and allow to thicken, about 2-3 minutes. Remove from heat and add the sour cream, cheese, nutmeg, garlic powder and ground pepper. Drain the pasta and broccoli, combine in one bowl. Top with the cream sauce and toss well. Serve immediately.
