I got this recipe from my mom, who got it from a friend, whose daughter found it from another source. In other words, it has been passed from person to person to person, which in my book, speaks volumes. Who would pass on a dud recipe? This bread is a bit more decadent than the last two days’ recipes, but everyone needs a treat now and then. The miniature chocolate chips are just enough chocolate to satisfy a chocolate craving, without overwhelming the bread. Banana Chocolate Chip Bread 1 ½ cups all purpose flour 1 teaspoon baking soda ½ teaspoon salt ¾ stick, softened butter 1 cup sugar 1 ½ cups mashed bananas 2 eggs 1 teaspoon vanilla ½ cup mini chocolate chips Preheat oven to 350 degrees. Spray a 9x5 loaf pan with cooking spray. In a bowl, mix the flour, baking soda and salt. In a separate bowl, cream the butter and sugar, add the banana, eggs and vanilla, beating until fully incorporated. Add the dry ingredients to the wet ingredients, being careful not to over-mix. Add the chocolate chips and stir lightly. Pour the batter into the pan and bake for 50-60 minutes or until a toothpick inserted in the middle comes out clean. Let cool and then gently invert to remove. Makes 1 loaf, approximately 12 slices. SPC
