Happy July! I love July—it is a month of pure summer and pure fun in the sun. The 4th of July is the quintessential summer holiday, and for many, a chance to break out their red, white and blue anything and everything.
I guess it comes as no surprise that blueberries are pretty popular this time of year, as they are in season and the only game in town to incorporate a natural blue hue into your holiday food. (Here’s a quick hint for all you blueberry lovers out there: buy up as many blueberries as you please this time of year when they are on sale. This is usually when blueberries are at their least expensive price and you can freeze them for use throughout the year. Just pop the blueberry container in your freezer, straight from the store. You can rinse them once you are ready to use them, and while they will be less firm once thawed, they are perfect for baking or for topping on cereal.)
As we continue to unpack from our recent move, my time in the kitchen to create has been very limited. It is hard to justify an hour or two in the kitchen when I have no idea where my boys’ tennis shoes or baseball hats are located. So this year for the 4th I’ve taken a decidedly low key stance, and come up with this brilliant (my humble opinion), easy Independence Day dessert or treat:
Kids universally love to eat almost anything on a stick, so the fact that this dessert is also pretty darn healthy will be lost on them as they enjoy the sheer joy of skewered fruit. A simple white chocolate drizzle helps add to the joy of this festive fruit treat.
Simply skewer the fruit in any pattern you choose (heck, you could even turn this food into a fun “patterning” exercise for younger children) and then top with a drizzle of melted white chocolate. To melt the chocolate, use white chocolate chips in a microwave safe dish. Cook on high for 30 second increments, stirring between until the chocolate is completely melted and then you are ready to drizzle or even dip.
