Quick fix

Some evenings, after the kids have been tucked into bed and Scott and I are settling in for some quality grown-up time in front of the TV, I'll find myself suddenly craving something...something sweet, something to top off a day well spent (or not well spent--sometimes dessert is the best remedy for a frazzling day); something sweet to savor, maybe with a glass of wine on a weekend evening. Usually what I crave and what I have waiting in the pantry are not one in the same. We don't keep a lot of sweets on hand. We don't tend to buy boxed cookies or keep candy in the house. But I do like to bake, and some days there will be leftover pie waiting from the day before, or cookies. Last night there was nothing. Zilch. But I knew what I craved: I craved chocolate. Not a simple chocolate bar, but gooey, oozy brownies--perfect with a glass of my beloved Trader Joe's Vinho Verde. But by the time we'd gotten the kids tucked in, and their respective stories (in L.'s case the latest chapter from a Hardy Boys adventure) it was 8:45, not the best time to embark on a baking project. But I was determined. Surely there was some quickie brownie recipe out there, waiting in the wings? Surely--please? There was. I found this recipe at epicurious, and was intrigued by the fact that it called for hot chocolate drink mix, which I just happened to have in the cabinet. I adapted it slightly by adding about a cup of chopped pecans, and a tablespoon of cocoa powder. I started mixing the brownies at 8:53 and by 9:02 they were in the oven. By 9:30 we had gooey, oozy chocolatey brownies ready to eat. Gooey oozy delightYum
