I'm also of the "Earth Day is every day" type, but I did plant a bunch of seeds on Wednesday.

Apples and sharp cheddar are one of my favorite combos. A great open-faced sandwich is apple slices, walnuts, and cheddar cheese toasted until melty.

That sandwich sounds divine! It's one of my favorite combos, too--and apples and walnuts are just made to go together.

That pizza looks wonderful! Thanks for sharing the recipe. Easy and delicious, just what we need this time of year. We are trying to eat more healthfully, so that will fit the bill.
I had big plans to get outdoors when we got home on Earth day. But when I picked up my kids they were wilted from a big day at their schools, having spent a big chunk of their day being outside. I realized they had a great Earth day, just not with me. :-( One of the bummers of having a school-ager and also of leaving your toddler to go to work. Sometimes they get to do really special things, just not always with me...

That's wonderful that they had such fun experiences at school. I don't think they did much of anything at L.'s school at all, which I was disappointed about.

That apple pizza is SO very yummy--and quick and perfect! Enjoy...
