I don't know that I'll ever be able to go completely back to being a vegetarian, particularly if I decide to stay of wheat permanently (plus the possibility of phasing out dairy too). But I am starting to think about cutting back how much meat we buy.

I do remember that my cravings changed when I was vegetarian and that a number of the vegetarian alternatives (like the bacon and burgers) became something I craved for their own merits, not because they were that close to the original.

It is interesting how the cravings change--I love the veggie alternatives to bacon and burgers, and I'd say about once a week or so we have veggie burger night with all the fixings (L. can't stand veggie burger night, though, and chooses to eat in another room. Sigh.)

I would imagine it would be a challenge to be gluten-free AND vegetarian, and that cutting back on meat could be more manageable.
