I have read about freezing tofu before, but have never tried it. Normally I don't go for vegetarian food that is mock meat, but this sounds interesting. And anything with pickle juice as an ingredient sounds good to me!

I had never tried freezing tofu, either, and what I love about this mock chicken salad is that it doesn't seem like chicken, yet it satisfies that crunchy/savory/creamy taste and is perfect in wraps.
