Quick Breads, Quick Snacks

With school back in session for most of us with school age children, this week I will share one of my favorite ways to eat healthy on the go, be it before school, after school or wherever you may be running.

Quick breads are aptly named for the amount of work that goes into mixing them together; not so much for the amount of baking time they require. Quick because there is no yeast, and therefore the prepping of the batter or dough for the bread is quite speedy. Yet the baking time for many of these breads hovers around one hour. [more]

The List

The List. Do you have one? While some lists are exciting or exotic, my list is well, um, functional.

I am writing about my permanently-afixed-to-my-refrigerator grocery list. Having resisted being so practical in the past, I realized that a running list of depleted grocery items was crucial once I became a mom and my ever-multi-tasking brain needed help. [more]

Roasted Vegetable Pizza Sauce

One of my favorite way to sneak in extra vegetables is by making big batches of homemade pizza sauce. Actually, you can use this sauce for pasta, lasagna, eggplant parmesan or anything that requires a marinara-type sauce, but we call any sort of marinara "pizza sauce" to help encourage R and G to eat it. They love pizza; tomatoes and vegetables, not nearly as much.

But tomatoes and vegetables abound in this simple pizza sauce. You can somewhat alter this recipe to what vegetables you have on hand, but you need to keep the base of this sauce tomatoes, or the flavor suffers. [more]

Kitchen Tips

So R loved his first day of school, declaring it "fantastic!" when I asked later that night. His teacher, who goes by just "Mrs. B," due to a long and hard-to-pronounce last name, seems wonderful and I chucked when I thought how appropriate since I call my boys "R" and "G" on this blog.

So as R is embarking on his elementary school days, I was thinking how you really never are too old to learn something new. Heck, it's what keeps us young, right?

Crowd Pleaser

If there was an award for loving chicken salad, my mom would win hands’ down. She is always on the hunt for new varieties of chicken salad (have you tried my curried chicken salad yet mom?) and finding new spins on the classic recipe.

Better yet, my mom has lots of experience feeding chicken salad to a crowd…she’s done everything from a baked chicken salad (yum) to the chicken salad croissants for my bridesmaid luncheon the day before SPH and I were married (sentimental yum). [more]

A Big Last

Parenthood is full of firsts...first smiles, first teeth, first steps, first, first, first. But somewhere along the way, you begin to count the "lasts" too.

We've been doing a lot of lasts here in the Sweet Pea Family, but one big milestone last for G is that he is done with diapers. Yes, my sweet G decided it was time to use his last diaper, as he is officially, in his words, "not a baby, a big boy!" This is a very welcome "last" indeed. [more]

Stuffed Peppers and Tomatoes and Squash, Oh My!

Our extra tomatoes, peppers and zucchinis were put to a good use for dinner the other night. It was a fun way to use our produce and made for a really scrumptious adaptation of our meatball recipe.

We used our favorite meatball recipe, Houston Meatballs, but with ground meat, not turkey.

Anyone Game?

Months ago, a good friend from my old neighborhood, emailed me about The Grocery Game. This friend happens to be a smart and sassy shopper, so when she started to explain that this website was a way she was saving tons on her grocery bill, I listened intently.

Jell-O Playd-O

Yesterday I shared a new favorite snack the boys have enjoyed eating this summer. The "Jell-O" oranges have been fun to eat, our recipe doesn't actually call for any Jell-O, but uses natural gelatin.

Waning...

I know it is cliche, but I can hardly believe that summer is ending so soon! Next week R embarks upon elementary school and kindergarten, so I'm soaking up these last few lazy (okay, so any day with children isn't truly *lazy*, but you get my drift) of summer before the school bus beckons.

A cousin of mine shared this fun snack idea with me earlier this summer. The original recipe uses boxed Jell-o, but we used natural gelatin and juice to achieve our snacking fun without any additives. Need use for your already-bought Jell-o? More on that tomorrow... [more]
