Simple Syrup, with emphasis on the simple

If you know me, you know I love Trader Joe’s. I was there last week and spotted a new item, a 12 ounce bottle of simple syrup for $2.49. I realize that TJ’s has a large following of folks who simply want flavorful, natural convenience food, and for most, buying this simple syrup would be a big convenience.

I am all for convenience, really I am. But making simple syrup could not be, well, simpler. To prove my point, I took a picture of my timer when I began and when I was finished…

Peanut Noodles

Peanut Butter is a ubiquitous kid friendly food, so why not use it in a grown up way to create a dish that both kids and adults will love?

This recipe is a quick and easy recipe for Asian style peanut noodles. Each time I make this recipe, it changes a little bit, based on what we have in the refrigerator. It is a good way to use up some vegetables and herbs you may have leftover from another meal. [more]

Food on a stick

With the warmer weather comes fair, festival and carnival season, and with it, a whole array of carnival foods. I am not sure what happens when one attends a festival, but suddenly things that we would not otherwise eat suddenly become staple foods. Elephant ears, funnel cakes, corn dogs, and the like grace most outdoor celebrations.

The Kohlrabi has arrived

Perhaps I should deem this week Unusual Produce week, since I’ve touched on casaba, beets and now, kohlrabi. Late last week in my weekly “what’s in the share” email from our CSA it was made known that this week’s share would include kohlrabi. This not very well known vegetable was one of my initial hesitations in joining a CSA. My CSA fear was that I would end up with a bunch of vegetables I did not know how to cook, or gobs of something that wasn’t my favorite…like kohlrabi.

Kid Friendly...Beets?

Professor Mom asked me the other day if I have any kid-friendly beet recipes, which I took on as a fun challenge. You see, beets are on the list. What is the list you ask? The list is the list of foods that are almost universally rejected by children at some point in their development. While I am sure there are some children that go from high chair to adulthood without any disdain for beets or other foods, despite my best efforts, my boys must have a copy of the list somewhere…

Trying Casaba

Looking for a simple way to interest your child in healthy eating? Trying letting them pick out something from the produce section next time you go grocery shopping. Fruit is a good choice, since most fruit is sweet and ready to eat, instead of needing elaborate cooking or baking first. My cousin Chelsea grew up taking turns with her brothers to pick out the fruit of the week. During a recent grocery shopping trip, I let R do the same. He chose, drumroll please:

The Way to a Father's Heart...

A couple years ago, SPH and I decided that the best present we could give each other for Mother’s and Father’s Day was time…time to sleep in, time to read the paper, time to do whatever the heck we wanted to do without worrying about how the kids would work into the equation. The decision was partly made due to the fact that SPH was in school full time and our budget was tight, but even now, with SPH working full time, we’ve kept the tradition. [more]

Summertime Thighs

Yesterday I was at the grocery store and once again, I discovered they were sold out of boneless, skinless chicken thighs. I asked the butcher if there were more in the back, she looked, but alas, they were out.

It seems to me the ubiquitous boneless, skinless chicken breast is slowly losing a bit of ground to the similarly prepared chicken thigh. I never was one for dark meat until I realized just how moist thighs cook up on the grill. Unlike chicken breasts, which can turn a bit tough on the grill, thighs stay tender and juicy. [more]

Food and Mood

Earlier this week I wrote about kids, summer and hydration. It got me thinking about how much food can also impact their moods, and if I have to look to a particular reason why my boys are so easily swayed by meals (or lackthereof), I need only find a mirror.

Fruit Salsa

My cousin Jill is pregnant with her first baby, due later this autumn. I saw her this past weekend during our camping trip and one of her pregnancy cravings is watermelon. If only every pregnancy craving were as healthy as hers!

Jill’s mom whipped up some amazing watermelon salsa that was so good, it would make anyone crave watermelon. While I await the recipe, I thought I would share my recipe for a fruit salsa that is easy to adapt to suit lots of different types of fruit, although I have not yet tried watermelon. [more]
