Winner SidesLast weekend when we were visiting R and G's Grandma Sheri and Papa, Grandma Sheri whipped up this orzo dish. It seems that every time we visit, I come back with some new recipe to take home with me. Grandma Sheri always has a wonderful smorgasbord of foods when we come to visit, but I have come to especially anticipate her wonderful side dishes. [more]

Grilled FruitSo here we are at the precipice of Memorial Day weekend. I wonder how many of you have already begun the weekend a bit early? We arrived late yesterday at R and G’s Grandma and Papa’s house. After a quick airplane ride which the boys absolutely loved (G when the plane landed after the hour flight: “it over already!?”), we rented a car and drove through the Baltimore/DC traffic at around 5pm. Note to self: next time, remember rush hour when determining which flights to choose. So, to any of you stuck in getaway-early weekend traffic, my condolences. [more] May 21, 2009
Fish Taco Odds and EndsThe fish tacos I posted yesterday need at least two things to make them go from good to great. First, some marinated shredded cabbage. SPH actually used our Texas Coleslaw Recipe minus the carrots.

A virtual trip to MexicoIf an Asian grill recipe isn’t up your alley this Memorial Day weekend, why not spin on over to Mexico and whip up some Grilled Fish Tacos? SPH made these tacos for Mother’s Day and I declared that they would have to be the new Mother’s Day dinner tradition. I *love* these tacos and they are so healthful and full of flavor. Peanut Sauce for the Chicken SatayTo R, the Chicken Satay I posted yesterday tastes good. He loves it. But if I take the extra time to whip up the peanut sauce so he can dip the skewers, then he is over-the-moon excited. This peanut sauce compliments the chicken perfectly, but it can be used as a condiment on other things too. You can even thin it out with extra coconut milk and use it as a dressing. The cool thing is that this recipe uses some of the same ingredients as the Satay, so you’ll get double duty out of any new food items you may purchase. May 18, 2009

Memorial Day comes early this year, so I thought this week I would share some new and exciting ways to whip up and grill up some healthy and kid friendly food this weekend. Chicken Sate or Satay is a popular Asian recipe to skewer and grill meat. The most popular way is to skewer marinated chicken and then serve with a peanut sauce. PB&J on the goYears ago I was in a gift shop in rural Virginia that sold little packets of what they deemed “peanut butter and jelly on the go.” Little bags of Oyster crackers, raisins and peanuts, it was a clever way to market their unique brand of snack packs. It was with this idea of portable peanut butter and jelly in mind that I slightly altered a recipe we have used many times to come up with a healthier and tastier play on the classic PB&J. [more] |
