Pantry Meals

I was having lunch with some mom friends and their kids at a friends’ home last Friday when the topic turned to grocery shopping, menu planning and pantry staples. A friend of mine commented, “I think I need to go grocery shopping with you.” When I asked her why, she shared that she wanted to know what was in my pantry to help get meals to the table fast. Broccoli Salad

Is your extended family like ours? For better or for worse, there are certain dishes that always, always appear at large holiday gatherings. My Aunt Di has been making her famous broccoli salad since I can remember. It ain’t gourmet, and there are a lot of different versions of this salad out there, but hers is the best, hands down.

Aunt Di brings this broccoli salad each Thanksgiving and Easter and it is a real crowd pleaser. As we inch ever so closer to summer, keep this recipe handy for a quick potluck item or picnic salad.

Houston Meatballs

Quick and Green

Any chef could use a time saver or two…especially a time saver that doesn’t sacrifice the taste or flavor of your food.

Steaming/Boiling Multitasking:

A simple trick...when you are boiling pasta, take a colander and place it over the boiling water to steam whatever vegetable you might need to cook.

Saves time, saves energy, saves water...another way to go green in the kitchen...while steaming up something green.

Seafood Rookie

I spent the first two-thirds of my life refusing to eat any seafood that didn't come from the Gordon Fisherman. I remember moving to the East Coast as a fresh college graduate and wondering how anyone could eat all the different types of seafood offered locally. These are the same types of seafood I now gobble up at any opportunity.

But despite my now fervent love of seafood, I still usually defer to SPH for any home cooking of seafood. I am determined to increase my seafood confidence in the kitchen and this new recipe I tried last week has helped me on my mission. [more]
