As I mentioned earlier this week, last year our family gave up meat for Lent. This year we each had our own Lenten challenge (R tried to give up haircuts!), and I opted for doing without chocolate. To celebrate now that Lent is over, these triple, yes triple chocolate chip cookies, are just what I am craving. These ain’t light, but when you are celebrating, a little butter is in order!
Triple Chocolate Chip Cookies
2 sticks of butter (1/2 cup total)
¾ cup sugar
¾ cup brown sugar
1 egg
2 ¼ cups flour
1 teaspoon baking soda
⅔ cup semi-sweet chocolate chips
⅔ cup white chocolate chips
⅔ cup dark chocolate chips
Preheat the oven to 375 degrees.
Cream the butter and sugars.
Add the egg, mix fully.
In a separate bowl, combine the flour and baking soda. Add to the butter mixture and stir until just combined.
Add the chips and stir again.
Place small mounds on a cookie sheet and bake for 8-10 minutes.
Makes about 4 dozen deliciously chocolate cookies.
