Do you have a repertoire of meals you keep in your back pocket when you are busy and aren’t feeling particularly creative? The recipes you know pretty much by heart and can go to the grocery store, without a list, and purchase the items for your meal.
Most weeks, I am cooking at least a couple new meals or dishes. But when my creativity fails me or when we are just too darn busy to allow me time to experiment in the kitchen, we have a list of probably 8-10 meals that we fall back upon time and time again.
Side note: if you don’t have an idea of a few meals that you can know the ingredient list without looking, I highly encourage you to do so. I can’t tell you how many time this “list” has helped me during a grocery store visit in which I realize I need another dinner for the week. Your list of meals need not be fancy or complicated, it could be as simple as pasta with jarred sauce or a chopped salad.
For us, “grilled fish” is often an item on our grocery list that doesn’t have a specific recipe attached to it. We simply pick what fish is fresh, and then come up with a marinade or rub to suit our tastes.
This marinade works beautifully for fish, chicken, pork or beef. If you have tequila in your liquor cabinet, all you will most likely need to pick up is a lime. Pair this tequila and lime with some popular pantry items, pour over your protein, marinate and cook...voila! an easy, tasty meal is served.
Tequila Lime Marinade
1/4 cup tequila
juice and zest from 1/2 a lime
4 teaspoons honey
3 tablespoons olive oil
6 turns of black pepper
1 teaspoon ground cumin
1 teaspoon garlic powder (or 4 cloves garlic, minced)
Combine all ingredients in a bowl. Mix very well.
Pour over your fish, chicken, pork or beef. If using fish, marinate only 15 minutes. Otherwise, marinate for at least 30 minutes or up to overnight.
Makes enough marinade for 1 pound of protein.
