Orange Marmalade Cookies

Over the weekend I was driving somewhere with the boys when R asked what day it was.  I said it was the 10th, then using his math skills, he figured out that 10 + 7 + 7 = 24, as in two weeks from the day was Christmas Eve!  It was cute to see the realization spread to R and then G’s face that we were quickly, quickly approaching the biggest day of the year in their opinion.  

We have yet to do much baking, so we’re having good friends over this week for a bake-a-thon after school one day.  We did this last year and it worked out so well:  R’s good friend and younger sister, coming over, with their mom, with 3 doughs already made.  We had 3 doughs too, so we were able to quickly make and decorate a large number of cookies.

This year, we may just make this new recipe:  Orange Marmalade Cookies.  I came across this recipe in the cookbook that I’ve probably used the longest:  The Joy of Cooking.  A good basic cookbook, the recipe below has been adapted from it.

Orange Marmalade Cookies

⅓ cup butter
⅔ white sugar
⅓ cup orange marmalade
1 teaspoon orange zest
1 egg
1 ¼ teaspoon baking powder
1 ½ cups flour

Preheat oven to 375 degrees.

In a medium bowl, cream the butter and sugar.  Add the marmalade, zest and egg, stirring well.  Set aside.

In a small bowl, mix the baking powder and flour.  Combine in the bowl with the orange marmalade.  Stir until just combined.


 

Drop 2-3 teaspoon portions of dough on a cookie sheet, about 3” apart.  These cookies spread, so leaving ample room is important.



Bake 8 minutes, or until the edges are just golden.

Let cool and using a metal spatula, transfer to a cooling rack.



Makes about 2-3 dozen soft, orange-y cookies.
