Last weekend I hosted some of my girlfriends from a preschool moms’ group over for a clothes’ swap. Have you ever attended a clothes’ swap? They are super fun. Every one brings 5 clothing items or accessories to swap. All the items need to be in excellent condition and still in fashion, and then you “shop” amongst all the items brought. This is the third clothes’ swap I have ever attended and each time I come home with some new-to-me clothes. The best part? Any leftover clothes are donated to a worthy cause.
At the clothes’ swap, my friend K brought these to-die-for oatmeal cookies. Everyone raved and I shared some with my family and they said, “do we have this recipe??” After a quick email to K, I laughed when she shared, “it’s just the recipe off the Quaker Oats lid, which I altered slightly to add dark chocolate chips!”
Sometimes the best recipes are right under our noses! Either way, here is K’s variation of the Quaker Oats Oatmeal Cookie Recipe, it is a keeper!
Oatmeal Cookies with Dark Chocolate and Raisins
½ cup (one stick) butter, softened
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla
1-1/2 cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups oats
1 cup raisins
1 cup dark chocolate chips
Preheat oven to 350 degrees.
In a large bowl, cream the butter, sugars, eggs and vanilla. Stir well to fully mix.
In a medium bowl, combine the flour, baking soda, cinnamon and salt (if using). Add the flour mixture to the butter mixture and stir well. Add the oats, raisins and chocolate chips, making sure everything is evenly mixed.
Place rounded spoonfuls (about 1 tablespoon each) on a cookie sheet, allowing adequate spacing for spreading during cooking.
Bake 8-10 minutes or until just slightly browned on the edges. Let cool 5 minutes, enjoy!
Makes 3-4 dozen cookies.
Just look at that ooey-gooey chocolate chip and raisin, all in one delicious bite!
