About twenty years ago, now known-to-be-healthful foods such as nuts and avocado were looked down upon due to their high fat content. It is now known that nuts, especially the oily ones, such as walnuts, are very healthful. The fats in nuts are unsaturated, and may even contribute to lowering overall cholesterol. Perhaps even more admired are the healthy oils in an avocado.
Avocados are full of healthy vitamins, oils and anti-oxidants and a healthful choice for children. It is thought that the oils in avocados can help aid brain and nervous system development. A doctor or scientific researcher I am not, but I keep hearing and reading good things about avocados.
Pair this interest in avocados with my firm belief that children love to dip food items. Children are born dippers, perhaps because it usually involves eating with their hands and getting a bit messy at times. G is our most avid dipper, sometimes going to unconventional lengths to continue dipping (If G’s carrots he used for dipping are gone, he sometimes moves on to dipping his fruit or even a sandwich!).
Enter my avocado dip recipe. It features avocado, a bit of seasoning and lime, but no visible chunks of onion, tomato or cilantro, which is prevalent in some guacamole. I created this recipe to be smooth like a dip, so I added some light sour cream to help stretch the avocado; after all, avocados are pricey, and the sour cream can help stretch the dip further. If you wish you can replace the sour cream with additional avocado.
Avocado Dip (makes about 1 1/2 cups)
1 large ripened avocado, mashed with the back of a fork
½ teaspoon onion powder
¼ teaspoon garlic powder
¼ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon ground black pepper
Juice of one lime
½ cup light sour cream (or if you wish, another ½ an avocado)
In a medium bowl, combine all ingredients, stirring well to break down any avocado chunks.
Serve immediately. While the lime juice in this recipe will slow the browning of avocado, it will brown after a bit.
