A quick Memorial Day post to encourage you that you can continue on your Meatless Monday challenge, even on this holiday synonymous with grilling—usually meat. But fear not, Meatless Monday followers, there are plenty of vegetarian options for your grill this kick-off-the-summer holiday.
Do you want something that tastes, looks and feels like a traditional burger? Then try your hand at Grilled Portabella Burgers. These marinated portabella caps are meaty, flavorful and for us, a simple way to enjoy a burger without meat.
If you like pizza, try grilling your pizza right on the racks of your grill. Try this dough, and place the rolled dough directly on a medium heat grill rack. Top quickly with sauce, toppings and cheese, then close the grill for 4-5 minutes or until the cheese is melted and slightly bubbly. Delicious!
Ready for an adventure? Try grilled tofu, yes tofu. Marinate the tofu before grilling in an Asian inspired marinade and then quickly grill and serve over greens. This recipe is a family favorite, and as SPH says, “don’t knock it until you tried it!”
