Happy New Year!  Is there any time of the year that inspires more people to take positive steps toward their good health?  Problem is, most resolutions are broken before the end of this month.  My hope is that if you are new to this blog, or a veteran reader, that this month of posts will be full of healthful recipes and tips to inspire your eating journey.

What is your biggest obstacle to eating healthfully?  Overwhelmingly, when I pose this question to friends and family the two answers I get most often are “time” and “convenience.”  I truly think most of us want to eat more healthfully, but many consider the amount of time for “from-scratch” cooking too overwhelming.

I am a busy mom who has way-too-much on her plate most days and weeks.  But I’ve found there are ways to eat healthy meals without spending hours in the kitchen.  So to start off this year, I am going to walk you through a few of my favorite ways to save time and energy in the kitchen without sacrificing good health.

This week I start with my favorite kitchen time-saving tool, the slow cooker, aka the Crock Pot.  Santa brought me a new one this year as my old one was on its last leg.  Its inspired me to use it even more, and each time I prepare a slow cooker meal, I get a little giddy knowing that dinner is often “done” before my day has even begun!

In the coming weeks I will also share three other strategies to easy weeknight meals:  pasta dishes (plus a tip to make it even faster than you can imagine!), make-ahead dishes and no-bake/cook meals.

I’m really excited to share these tips and recipes with you and hope they’ll inspire you to take steps or continue on your journey toward good health!  After all, good health is the centerpiece to happy living.
