Try my Barbecue Chicken Meatloaf recipe and instead of shaping the mixture into a loaf, press ¼ cup balls into the cups of a muffin tin.
Bake 15-20 minutes
While baking, whip up some mashed cauliflower.
Once the meatloaf cupcakes are cooled a bit, “frost” with the mashed cauliflower and use a steamed asparagus as the candle!
