In the Fall Garden

I love the autumn, I really do. In the hot summer months, I crave to have the windows open without oppressive heat and humidity sneaking into our house. When the weather cools and we can open our windows again, I am a happy camper.

Summer Cucumber Salad

This recipe screams summer to me.

Growing up my mom made a variation of this regularly throughout the summer months. When I met SPH, he had grown up eating something similar. Chances are, you have had a variation, but this is our favorite.

Summer Cucumber Salad*

1 large cucumber, unpeeled, sliced very thin
1/4 cup red onion, sliced very thin
1/2 cup rice vinegar (or alternatively, use cider vinegar or white balsamic vinegar)
3 tablespoons water
1/3 cup white sugar
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper [more]

My Compost Bowl

A nationally known food star regularly uses a "garbage bowl" on the counter to collect food items to throw away once the cooking is complete. The thought is that the collecting of waste at the counter expedites the cooking process, taking away the need for many trips to the trash.

Kid Friendly...Beets?

Professor Mom asked me the other day if I have any kid-friendly beet recipes, which I took on as a fun challenge.

You see, beets are on the list. What is the list you ask? The list is the list of foods that are almost universally rejected by children at some point in their development.
